So when I got my hands on the new cookbook from the author’s of Slow Roasted Italian, Donna and Chad Elick, I made a bee-line for this recipe for roasted sweet potatoes.  Their new cookbook, The Simple Kitchen, is full of amazing and easy recipes.  So many great dinner ideas, appetizers, and sides that you will drool over.
And just like everything else in their cookbook, these sweet potatoes don’t disappoint.  They are tossed with melted butter, brown sugar, cinnamon, and a little cayenne and then thrown into a pipping hot oven and roasted up.

Brown Sugar Roasted Sweet Potatoes

These Brown Sugar Roasted Sweet Potatoes are roasted with brown sugar, cinnamon, butter, and a little cayenne for a kick.  They are the perfect side dish recipe.  Easy to throw together and delicious!

 Cook Time 20 minutes
 Total Time 20 minutes
 Servings 4 people

Ingredients

  • 4 TBSP unsalted butter melted
  • 2 TBSP light brown sugar packed
  • 1/2 tsp cinnamon
  • 1/2 tsp kosher salt
  • 1/4 tsp cayenne pepper
  • 2 large sweet potatoes peeled and cut into 1/2 inch cubes

Instructions

  1. Preheat your oven to 450 degrees.  Line a baking sheet with aluminum foil.
  2. Melt the butter in a microwave safe bowl.  Mix the brown sugar, cinnamon, salt, and cayenne pepper into the butter.
  3. Spread the potatoes on the lined baking sheet.  Toss with the butter mixture until the potatoes are completely coated.  Bake 20 to 25 minutes, stirring once halfway through.
